You know those days when you have not stopped since your eyes opened at 5:08 am? You have hopped, skipped, and jumped through every activity, to-do, annoyance, and obligation and you have arrived home with wrinkled clothes, disheveled hair, and a near case of exhaustion. Other than a cold beer, a warm meal is just what you need… but the LAST thing you want to do is cook. Enter “The Grown Up Grilled Cheese”.
Is there anything more comforting than a grilled cheese sandwich? Not much.
What makes this grilled cheese “Grown-Up”? Aside from the fact that you can enjoy a nice brew with it, this sandwich is a notch more sophisticated than the Wonder White bread and Kraft Single grilled cheese of the 90’s.
It is almost laughable to provide a recipe for this sandwich since I made it with ingredients found in the kitchen, but it is so delicious and easy I felt I had to share! Also, it is vegetarian!
Grown Up Grilled Cheese Sandwich
1/2 avocado sliced
1 slice of Swiss cheese
1/3 cup shredded Colby & Monterey Jack Cheese
2 Sandwich tomato slices
2 slices of wheat bread
Spray skillet with Pam
Place skillet on burner and turn to medium heat
Butter one side of each slice of bread with knife
Place one slice of bread, butter side down, on skillet
Place Swiss Cheese slice on bread
Sprinkle Colby & Monterey Jack Cheese on top of Swiss slice
Place sliced avocado pieces on top of shredded cheese
Lay tomato slices on top of avocado
Place 2nd slice of bread on top, butter side up
Heat sandwich in skillet and flip with spatula until cheese is melted and outsides of bread are golden brown
